Effortless Bruschetta for Laid-Back Feasting

If you haven’t tried pan fried halloumi you are are missing out! This recipe is sure to make your taste buds do a happy dance. Whether enjoyed as an appetizer, side dish, or even the star of the show, this crispy delight never fails to impress.

Ingredients

Good quality olive oil or garlic oil
Fresh tomatoes
Fresh basil
Fresh mozzarella or bocconcini
Balsamic vinegar
Balsamic reduction
Sea salt

Method

  1. Drizzle sliced sour dough with the garlic oil and sea salt and char on the bbq or cook in oven until golden and crisp.
  2. Dice tomatoes (colourful varieties are nice for presentation)
  3. Slice or shred basil and add to tomato mix with a dash of vinegar, olive oil and salt until seasoned to your liking.
  4. Break up cheese into clumps and coat in olive oil and salt to taste.
  5. Arrange tomato and cheese on top of toast, drizzle with balsamic reduction and enjoy.
