  1. Remove silver skin, leaving the white fat
  2. Cover in your chosen herb butter
  3. Wrap tightly in the gladwrap
  4. Cook in the oven until the internal temp gets to 50° degrees 
  5. Let it rest in the gladwrap
  6. Cut and sear on a grill
